Kilinga Bacanora Silvestre is a distinctive spirit made with Maguey Pacifica (Angustifolia Haw) in Álamos, Sonora, México. The bacanora is a product of Kilinga Bacanora, a family-owned brand established in 2018 by Rodrigo Bojórquez Bours. The creation of this spirit was inspired by Rodrigo's experience with a Bacanora made by a Sonoran friend, which left a lasting impression due to its unique flavor profile, distinct from other Bacanoras he had tried.
Tasting notes for the Kilinga Bacanora Silvestre indicate a complex and intriguing profile. It features notes of wildflowers, citrus, and the tartness of green apples, with a gentle violet finish. The palate is described as herbal with elements of grass, lemongrass, sweet potato, orange oils, and a lingering soapy lavender finish. This bacanora is also noted for its aromatic qualities and moderate complexity, despite being 40% ABV. It stands out for its unique notes compared to other bacanoras and even gives off a sugarcane rum vibe.
This spirit reflects the unique Sonora terroir and artisanal methods, capturing the essence of the region and the traditional spirit-making process.
