Released in 2016, Lot 16 is crafted from a blend of whiskies aged between 4 to 10 years. The distillation process uses multiple roast levels of malted barley to create layers of flavor, with a portion of the barley lightly smoked over alder and beech wood. This whiskey is aged in a mix of used bourbon casks, French oak, port, and sherry casks.
Tasting notes for Lot 16 reveal a complex profile. On the nose, it presents dry sweetness, dark roast coffee beans, and subtle funky notes typical of St. George products. The palate is mellow and light-bodied, with flavors of leather, baking chocolate, marshmallow cream, dried leaves, and a hint of cigar smoke. The finish is long, savory, and slightly mushroomy.
