This private batch of Mezcal Vago is distilled from mezcalero Joel Barriga and produced in Hacienda Tapanala, Oaxaca. Joel is known for the beautiful espadins he distills for Vago. This batch is 55% cuishe and 45% espadin and distilled to 102 proof. The agaves are roasted in an earthen oven, crushed by a tahona, fermented using ambient yeast and double distilled in copper pot stills.
Tasting notes:
Nose: wild flowers, earthy, dried grass, charcoal embers
Palet: Green and herbaceous. Oregano, cracked black pepper. As it sits, notes of mangos, guava, and grilled asparagus.
