Tasting Notes:

Pours a beautiful deep gold color that in this moment reminds me of ancient royalty, like like an Egyptian pharaoh. On the nose I get honeycomb, marzipan, puffed rice cereal, thyme, cured firewood, caramel ice cream, graham crackers and a hint of gravel. The aromas pack a punch, I find a drop or 2 of water opens and softens the nose quite a bit. On the palate I get notes of beets, earth, volcanic rocks, sage, burnt caramel, rock candy, kettle corn, cinnamon and a touch of buttery croissants. The absolute showstopping part for me is the flavor of beets, I’ve never tasted a bourbon like this before, the concentrated earthy-beet like notes make it incredibly unique and delicious. The finish is warm and satisfying, almost like a freshly baked rhubarb pie, you can’t help but want more after each sip.
