Rey Campero Espadin Mezcal showcases the rich heritage of mezcal production in Candelaria Yegolé, Oaxaca. Masterfully created by Mezcalero Rómulo Sánchez Parada, this mezcal is a fine representation of traditional craftsmanship. It is made exclusively from Espadin agave, which is carefully matured for 6 to 7 years before harvesting, ensuring a depth and complexity of flavor.

This mezcal's distinctive flavor profile is a harmonious blend of sweet and smoky notes. Its aroma combines the earthiness of clay and wet soil with the richness of charred cinnamon and sweet spicy smoke. The palate is treated to a complex array of flavors, including blistered pineapple, fresh aloe, and hay, complemented by a bright acidity. The mezcal's piquant texture enhances its natural spiciness, while delicate white floral notes provide a slightly sweet and earthy finish.

The production process of Rey Campero Espadin is an art in itself. The agave is cooked in-ground for up to five days, followed by a week-long cooling and resting phase. Afterward, the agave is crushed using a traditional tahona, and the mash undergoes open-air fermentation with wild yeasts for up to 12 days. The mezcal is then double distilled in small copper pot stills. This meticulous process, combined with the aging of many batches in glass, lends the mezcal a smooth and nuanced character.
